That was my first WOMAD. I have never been to such a chilled, friendly, inspiring festival : ) Thank you WOMAD!!!
I have an everlasting image of a baby being held aloft, clad with green ear protectors, grinning in front of the main stage : )
So, I have come to the conclusion that the Madras Cafe made the best chai. Does anyone know the recipe?


Re the chai: they were handing out free copies of the dahl recipe and a lady next to us asked of the volunteers about other recipes. He couldn't help but said that by next year they were hoping to have a lot more of their recipes in print. Not sure if that would be free handouts or a recipe book. I would certainly buy a book from them - they are our favourite WOMAD eaterie.

The Madras Chai was also the cheapest at £1.50 if I remember correctly.

Best food and best Chai on site.
Typically you would boil up leaf Indian Tea, Milk, Sugar and some freshly ground spices (probably pepper, cardoman, cloves, cinnamon, maybe ginger or fennel). You can have a go and adjust to taste - but what really counts is using proper tea and fresh spice and cooking it up - no tea bags or adding sugar at the end! Some South Asian shops will sell Chai Masala but will also sell cheap fresh spices too.
